Simple Steps You Can Take to Optimize a Vegan Diet

Let's face it, there are as many ways to be unhealthy on a vegetarian diet as on a meat diet. Many vegetarians think that by eschewing meat they are guaranteed to be healthier. Nothing could be further from the truth. Countless experienced physicians and naturopaths report that it is not at all uncommon to see unwell vegetarians in their practice. Some overload on cooked starches. Some pursue extreme fruitarian diets that eventually cause all kinds of problems. Others pay no attention to how to get vitamin B12 into their vegetarian diet and suffer as an eventual consequence.
It is possible to achieve a high level of vibrant health on a vegetarian diet, even a vegan diet which cuts out all animal products including eggs, dairy and even honey, but it takes some know how. According to Dr. Gabriel Cousens, M.D., one of the world's most knowledgeable proponents of an organic, living foods, vegan way of eating, there are three supplements that are essential to ensuring high level health and wellness. In part, requirements for these supplements stem from the sad fact that our farm soils are now weak and depleted. Man made toxins occur in our air, water and soil, requiring some extra help in our dietary in the form of these three crucial supplements. In no order of importance, they are:
Vitamin B12 -- Despite what some uninformed nutritionists say, you cannot get sufficient B12 from seaweed or other vegetable sources. A B12 deficiency can lead to Pernicious Anemia (not enough red blood cells) and the bad effects are many and various, principally affecting the nervous system and causing weakness, tingling, lack of coordination, memory and concentration problems and even paralysis. Fortunately, B12 is readily available in supplement form. The methylcobalamin and hydroxocobalamin forms of the vitamin are superior to the cyanocobalamin form, so read labels and choose the best.
Long chain omega-3 fatty acids - Essential for optimal human health, Doctor Cousens has found omega-3s to be deficient in the vast majority of his clients, both meat eaters and vegetarians. DHA and EPA are two essential long chain fatty acids that are of particular benefit to the brain and nervous system. Dr. Cousens has found that "post-partum depression rapidly dissolves when the mother is given ample amounts of DHA." L-Carnosine - As we age, the telomeres at the end of our DNA strands weaken and shorten. This contributes to the acceleration of the aging process. L-carnosine, an amino acid, prevents the telomeres from shortening and thus may contribute significantly as an anti-aging supplement. Carnosine is found in meat, but not in a vegetarian diet. High levels are found in the brain, the eyes and the heart. It is broken down in the body by the enzyme carnosinase, but supplementing 1,000 mg a day ( 2 capsules) is more than enough to keep high levels circulating with its anti-aging effects. On a Healthful Omnivorous Diet
Not all humans thrive on a vegetarian diet. Take the Dalai Lama as one notable example. Coming from a high altitude Tibetan gene pool long adapted to meat and dairy fare, he tried to switch to a vegetarian diet. His health suffered to the point where his doctors told him he'd better resume meat eating if he wanted to be well. I'm fully aware of all the arguments about how certain raw foodist, super food enhanced, vegan regimes are so much better than standard cooked vegetarian fare, but it is also possible to mismanage raw food vegan eating and I have seen enough unhealthy, spaced out, even seriously unwell vegans (and so have professional naturopathic and allopathic friends and associates) to suggest that, above all, listen to your own body, not to anyone's theories about what you should or should not eat.
If you do find that you need meat and/or dairy to thrive, here are a few simple tips to assist you in making the healthiest food choices.

Lean in the direction of the Paleo Diet. This way of eating, harkening back to our hunter-gatherer roots during which our human DNA adapted over eons of time to this way of eating, minimizes or eliminates grains and dairy, which just happen to be two of the most common food allergens humans ingest. Coincidence? Here's a great place to get familiar with Paleo eating... Paleo Essentials. If you crave grains or really miss that grain-like texture and taste in your diet, consider buckwheat. It is not a grain, but a fruit seed related to rhubarb and sorrel. One part of buckwheat flour stirred into two parts water makes a simple, tasty crepe in the frying pan. Also, check out Quinoa, a high protein seed that is gluten free and far more nutritious than any standard bread, pasta or bakery product.
Make friends with coconut oil, olive oil and butter, the latter preferably from grass fed cows. These are by far the healthiest fats for human ingestion. Make broccolini (young immature broccoli, a.k.a. brocolettes) a regular part of your diet. The high levels of sulforaphane it contains play an impressive role in protective gene regulation and anti-cancer mechanisms throughout the body. New evidence suggests broccoli may also be a very useful food to combat osteoarthritis.

As with any diet, avoid refined sugar and empty carbohydrate foods of all kinds. While they are tasty, comfort foods up front, they wreak a world of blood sugar havoc and low energy on the back end.
I heartily recommend partaking of all food with genuine gratitude. In the USA, the Environmental Working Group has produced a very useful, quick and easy food chart for you to consult in order to find out how you can save money and better protect your health with your food shopping choices. The 'Dirty Dozen' are twelve common foods that are considered downright unsafe to eat in conventional, i.e., non-organic form. They are heavily sprayed and toxic. The 'Clean 15', on the other hand, are common foods that are quite toxin free and safe to eat even in non-organic form. Please remember though, if you can afford it or you're lucky enough to be able to grow your own food, organic is always better. Our human DNA is the product of millions of years of planetary evolution during which living organisms have adapted to and thrived on organic food alone. It is only in the last eye blink of earthside time that we have been challenging our biochemistry with chemicals found nowhere in nature. We are developing new diseases, especially neurological ones, faster than we can even name them, let alone cure them.

Vitamin D If it's seldom sunny where you live, you need to read this!
Vitamin D has been in the news a lot lately, touted as an essential component of a healthy immune system. D helps to regulate how the important minerals calcium and phosphorus are utilized. This important vitamin also plays a role in cell communication throughout the body. It is now common knowledge, at least among D savvy health practitioners, that colds and flus always increase in the temperate climates during the relatively cloudy fall and winter periods and diminish when the sun comes out and lots of immune enhancing vitamin D is created through the action of sunlight on skin.
For many decades, the nutritional word of wisdom from the FDA was that the upper limit for Vitamin D supplementation was 400 i.u. per day. Recent research has determined otherwise by a country mile. It has been observed that an average healthy adult sunbathing nude for a mere half hour will manufacture 20,000 i.u.s of Vitamin D through the action of sunlight on the skin alone!
The Vitamin D Newsletter, generated by a team of D savvy MDs, now recommends that people supplement with Vitamin D at several times the 400 i.u. daily limit. Recommended amounts of 5,000 - 8,000's i.u.s a day are common, except of course for days of sun exposure on the skin, when you don’t need it at all. As always, play safe and ask your health care professional for a 25 (OH)D blood test to help determine whether or not you are low in D. Don't get the test done on summer days when your body is exposed to lots of sun, for obvious reasons.
Several studies cited by R. Beliveau, Ph.D. and Denis Gingras, Ph.D., in their book 'Eating Well, Living Well', show compelling evidence of the role Vitamin D plays in the prevention of many types of cancer.
Also, be advised that Vitamin D is fat soluble. Read supplement labels to see what kind of oil is used in the D gel capsules. You may want to avoid soy oil, especially if you have no way of knowing whether or not it was produced from GMO soy. Some brands use lanolin, so vegans be aware. Some brands use olive oil which is a great choice.
Finally, Vitamin D comes in two supplemental forms, D2 and D3. Most nutritionists recommend D3 as it is the more natural form of the supplement and better utilized by the body.

In an article on "critters", Texas neurosurgeon, Russell Blaylock MD, points out that the average adult human body contains about ten trillion cells. That's a lot. As anyone who has ever suffered from kidney stones will tell you, the pain can be excruciating. Green tea's beneficial effects are due chiefly to catechins. One of them, epigallocatechin gallate, is an antioxidant about 25-100 times more potent than vitamins C and E. The high antioxidant activity of green tea protects the body from oxidative damage due to free radicals. Appreciation (when it's genuine) & Psychoneuroimmunological Healing
Flow appreciation to what arises as your experience in each moment. What Is, is awesome. If there is a God, all we can ever know of Her is What Is. If Freedom, Liberation, Transcendence have real meaning, we will never find them anywhere other than here and now. Most of us miss the great opportunity that is always HERE because we resist What Is in a thousand ways. It's not good enough. I want something better. I'm using the present moment as a stepping stone to a better job, better health, better sex. Heck, I'd settle for something decent to watch on Netflix. I'm running from my past and grasping at my future, lost in my mind's oppositional tug-of-wars: certain about this and that, fearful and insecure about that and this. The profound presence of Being, meanwhile, though always right here, does not register. I never 'get it', too busy fabricating a problematical zero sum hunt for a personalized something else.
Simple appreciation can prove such a healing balm, if repeatedly evoked over time, that you may find yourself, in the words of a C.S. Lewis book title, 'Surprised By Joy.' The great thing is, you don't have to go out of your way at all to practice this appreciation. You can even do it in bed! Try appreciating your bed before you fall asleep in it. Flow appreciative feelings and words to your mattress, your pillow, your blanket, your gravity bonded body and mean it:
- Thank you, mattress, for supporting this body; blankets for keeping me warm. I really appreciate you.
- Thank you, my blessed heart, so faithfully keeping everything going and flowing and alive. I am yours and you are mine. We are one in Love Divine.
- Thank you, sea of air in which I breathe and live. Precious lungs, I bathe you in healing white light.
To some of you, these suggestions may sound too sappy. By all means, choose your own words of appreciation and really mean them. As attested to by neuroscientists like Candace Pert Ph.D., author of 'Molecules of Emotion' and Bruce Lipton Ph.D., 'The Biology of Belief', it doesn't matter one little bit that you are flowing appreciation to inanimate objects (actually, it does, but that's a deeper subject). What matters is the endorphin (and other neuropeptides) producing flow of appreciative feelings that unquestionably affect the vitality of your living cells.
Engage in a little daily appreciation practice and see what starts to happen over time. Regular and sincere practice will greatly expand and improve your capacity for appreciation. Things, persons and circumstances you never noticed before, ignored or took for granted may start to feel like grace - not the kind you have to pray for, but, rather, the kind that spontaneously happens and makes you glad to be alive. Unwatched for healing is not uncommonly a by-product of cultivating caring, appreciative feeling states. The quality of our relationship with self, others and with the commonplace, every day things around us matters greatly.

It is especially rewarding to 'make friends' with your heart. Years ago, I endured a cardiac arrhythmia that went on for months. I saw doctors. Medicines were prescribed. I still had the arrythmia. Then one night, I did a simple heart exercise that I learned from the Heart Math Institute. I lay in bed, basically addressing my heart, sending it feelings of appreciation, becoming more intimately aware of it, then listening and feeling for whatever it was that my heart was 'telling' me. I feel, in my case, that my heart was so grateful that I was paying any attention to it at all (I tend to live in my head, as you may have noticed) that I experienced sensations of warm euphoria in my chest. It's not a vitamiin supplement, but a cancer-killing (cytotoxic) substance, with virtually no side effects. There have been clinical trials and over 30 years of study--it's not some crackpot cure. It is also recommended that when taking paw paw, you take an enzyme such as Protease Plus or enteric coated pancreatin. This is taken in order to break down the outer "shell" of the cancer cells, allowing the paw paw to work more effectively. Paw paw is taken with food. However, the enzyme must be taken on an empty stomach. If taken on a full stomach, it will simply start digesting the food, instead of getting to the cells.

Cancer and Abscisic Acid
Based on her research, Dr. Livingston-Wheeler determined that abscisic acid neutralizes the effect of chorionic gonadotropin, the hormone that protects the fetus from being rejected, and she classed it as her prime supplement in treating cancer. Livingston-Wheeler discovered that cancer cells (or the microbes associated with them) produce a substance very similar to chorionic gonadotropin. Abscisic acid is a close relative of Vitamin A. In her book, The Conquest of Cancer; Livingston-Wheeler describes how you can make abscisic acid.
"Add one teaspoon of raw liver powder to an 8 oz glass of carrot juice (must be organic). Stir and let stand for fifteen to twenty minutes and then drink it.
"The enzymes in the liver powder convert some of the Vitamin A in the carrot juice into abscisic acid."
Abscisic Acid (ABA)
ABA reverses the effect of growth-stimulating hormones (auxin, gibberellins, cytokinin) in several tissues. The synthesis of hydroxylases within germinating wheat seeds, for example, does not take place after the application of ABA.

Abscisic acid is a plant hormone and an analog of retinoic acid! The latter, a form of vitamin A has been suggested for cancer treatment, including squamous cell carcinomas.
A sobering reminder
Re: all the raging arguments daily waged on the web about what really causes the 10,000 ailments to which flesh is heir. Check out this data from the World Conservation Press... an estimated 14 million species still unidentified. Would sure be interesting to know what percentage of that huge number are pathogenic bacteria and fungi. Then, consider US Dept of Agriculture claim that there are an estimated 20,000 - 30,000 therapeutic phytochemicals in fruits and vegetables -- and the number of those that have been scientifically studied so far is somewhere between 200 - 300. It's amazing how we carry on like we know all about what causes this and what cures that.
